Sauerkraut

This is a section specially for my British readers. On my way from Kirchheim/Teck to Calw in the Northern Black Forest I passed through an area, which is famous for growing the kind of cabbage, which is turned into sauerkraut. It is not harvest time yet, so the plants look rather indistinct, but still, here is a baby cabbage plan. The cabbage of this area, which is called Filder, is special in that the cabbage appears pointed. I met a very friendly farmer with his mother. They told me that they themselves gave up growing cabbage. They grow strawberries instead. The demand has dropped (could you understand why), as now fresh vegetables are available all year round. Sauerkraut used to be an important source for vitamin C and a lot of it was shipped to Hamburg to be used on ships sailing from large ports. Apparently the pointed version is in decline as the round cabbage makes processing easier. Do you want me go to on about it...?

 

In diesem Abschnitt erzähle ich meinen Britischen Lesern ein wenig über das Filderkraut. Sauerkraut wird allgemein in Großbritannien nicht sehr geschätzt und als eine Merkwürdigkeit der deutschen Küche angesehen. Ich traf sehr freundliche Bauern, die heute Erdbeeren anbauen, aber früher Filderkrautproduzenten waren. Die Nachfrage ist zurückgegangen, seit frisches Gemüse das ganze Jahr hindurch erhältlich ist. Der typische Filder Spitzkohl wird nur noch selten angebaut, da Rundkohl leichter zu verarbeiten ist. Eigentlich schade. Sauerkraut war früher eine wesentliche Quelle für Vitamin C, besonders of Schiffen.
